Smoked Trout and Mango Salsa
You will need:
Flesh of Smoked Trout - flaked into pieces
Red onion - finely sliced
Mango - finely diced
Tomato - finely diced
Fresh coriander- roughly chopped
Dressing (not essential but a nice addition)
3 parts olive oil
½ part white balsamic
1 part lime juice
Salt & Pepper
Combine Salsa ingredients in a bowl - mix dressing ingredients together and add to salsa before serving.
Trout Salsa can be served on crackers, as a bruschetta topping or as a side dish to accompany your main meal.
