Black Pasta Dough

1 tsp Squid Ink
1 Egg

100 gm Flour

pinch Salt

1. Mix squid ink and egg together in bowl.
2. Work in the liquids, then proceed as for basic pasta dough.


Smoked Trout Sauce (recipe courtesy of David Alleway)

1 Buxton Smoked Trout
1 small tub Sour Cream
Some beans, asparagus or other greens of your choice
1 handful Capers
 

1. Remove Skin and flesh from smoked trout and place in saucepan on medium - low heat. 

2. Add sour cream and beans/asparagus and stir through
3. Add capers at the last moment
